Ingredients: -whole
tomato with stem -goat cheese -white mushrooms -avocado cut in half -balsamic vinaigrette dressing -lemon vinaigrette with chives
Preparation: 1. Score a cross the bottom of tomato 2. Put tomato in boiling water for 30 seconds 3. Peel the skin off, cut the bottom of tomato and scoop all seeds with a small teaspoon 4. Stuff tomato with goat
cheese 5. Refrigerate stuffed tomato for 2 hours 6. Set the tomato in the center of a plate, add salt and pepper,
and sprinkle with balsamic vinaigrette 7. Slice mushrooms and mix them with olive oil, lemon, and chives. Set the mixture
one side of the tomato. 8. Slice avocado and fan it. Sprinkle it with balsamic vinaigrette and set it on the other side
of the tomato.
